I will be appearing at Alvernia University to discuss Grace Unexpectedmy witty women's fiction featuring a flawed female protagonist who works at a small Pennsylvania university. (Franco Library, 1 p.m., Reading, PA) 

Summer makes everything better...

And so does a great zucchini recipe! 

Zucchini. The seedlings require something approaching a geologic epoch to take hold, don't they? You wait and wait and wait for tiny orange blossoms in May and June.

They finally blossom in July, and you wait some more.

Since you are now tired of waiting, you go away on vacation in the beginning of August, and ... BAM! There's a dozen zucchini the size of cricket bats hiding beneath leaves larger than woolly mammoth footprints overtaking your 10 x 10 garden plot when you get home.

What to do? What to do?

Don't panic. Don't automatically sic them on unsuspecting neighbors either. All you need is a good zucchini recipe or ten.

(Let's face it. There's only so many times you can stir-fry zucchini with sliced tomatoes and basil and retain your dignity as a cook.)

I got this recipe for Zucchini Garden Chowder from my lovely Mennonite neighbor Evie Shumaker, and, let me tell you, it's a keeper. I give this recipe five stars because it is easy to make, it's inexpensive, it tastes delicious, and it uses up at least two zucchini or one the size of said cricket bat.

2 medium zucchini
1 onion chopped
2 T. parsley
1 t. basil
1/3 c. butter
1/3 cup flour
1/4 t. pepper
3 c. water
3 chicken bouillon cubes
1 t. lemon juice
1 can diced tomatoes
1 c. skim milk
1 pkg (10 oz.) frozen corn
1/4 c. grated Parmesan cheese
2 c. shredded cheddar cheese

Sauté zucchini, onion, parsley, and basil in butter until tender. Stir in flour, salt, and pepper. Add water, bouillon, and lemon juice. Bring to boil--stir for two minutes. Add tomatoes, milk, & corn. Bring to boil. Reduce heat. Cover. Simmer 5 minutes. Add cheese before serving.

Lick your lips and enjoy! Very yummy.

Just so you know, you can swap out frozen succotash for the corn or even frozen peas, and it still works, except if you are like me and don't really like frozen peas.

What did I do during my summer vacation?
I traveled to Glimmerglass Festival in New York State for the third straight year to review opera and theater includingThe Flying Dutchman by Richard Wagner in celebration of his bicentennary, Camelot by Lerner and Loewe (the annual Glimmerglass musical theater offering), and a stunning staged oratorio of early music calledStabat Mater by Pergolesi.

I love this annual trek to Cooperstown, which usually includes some tasty grill hopping at the Blue Mingo situated alongside Lake Otsego--literally.
